Designed to pair with the hearty Africola menu and the hot South Australian climate. Vibrant, creative, raw, rich, and amply sufficient, is the best way we could describe Africola. How in theworld can one come up with a beer to compete with that?
Create something to complement rather than compete with a focus on texture, restrained and delicate, but with a distinctive bright edge was our answer.
Nikki, wearer of most hats of the awesomeness that is Africola, was really keen to focus on the textural side of beer, rather than a big hop bomb that one might normally go with to compete with big flavoured food.
We decided on making a Saison as it is a style that in our minds really holds its own when it comes to texture and layers of flavour.

HOW WE MAKE IT:
Theis Africola collaboration also included an influence from a local restaurant. When working on recipe concepts, Nikki ( Africola) was looking to include citrus in this beer. At the same time Michael Ryan, of Provenance had offered us access to some amazing citrus, Chinotto. The fruit was graudually added at the end of fermentation.
