10% Celebration Ale. To celebrate our 2000th brew we have created a beer that uses something old and something new. Blending whiskey and bourbon barrel aged B2 Bomber Mach 7.0 ( aged 24 months on Brettanomyces) with a freshly brewed imperial stout. This challenging beer combines much of what we have learned from brewing the previous 1999 beers, whilst also trying something completely new for us. The freshly brewed portion of this beer is a melding of a few styles probably best described as the love child of a Belgo Quad and an Imperial Stout. The malt bill was designed in such a way to challenge even the best brewhouses, going above and beyond both the mash tun capacity and recommended amounts of specialty malts.
The beer pours black with a dark brown head. The aroma is incredibly complex, with dominating aromas of currents, brandy and candied fruit. Undertones of bubble gum and pineapple from the Brett fermentation along with lots of oak from the barrels fill out the aroma nicely.
The palate has a great combination of both the old and new. Up front the malt profile is big and smooth, full of chocolate and roast. Cutting through this is the acidity and oak from barrel aging, leaving your pallet both refreshed and interested.
A fantastic beer to sit and appreciate while still wanting to drink plenty of it.
