WHAT IS KOMBUCHA?
Kombucha is a natural fermented tea beverage, made by combining tea and sugar with a symbiotic culture of yeast and bacteria (scoby). The result is a lightly carbonated slightly sweet beverage (that can have a tart bite depending on the brew), full of healthy components like b vitamins, organic acids and antioxidants with trace elements of alcohol (generally less than 0.5%).
WHAT IS ALCOHOLIC KOMBUCHA
Alcoholic kombucha is a kombucha which is intentionally fermented (or brewed) with higher level of residual alcohol (halo is 4.0% abv), and so is deemed an alcoholic beverage for consumption by adults only (18 years of age or older).

Halo has a proprietary two stage fermentation process with additional organic sugars and yeasts added in a controlled secondary fermentation to increase the level of residual alcohol to 4.0% abv. All sugars are consumed during the fermentation process (hence the very low sugar level) and there is no added sugars as part of the flavouring process. All raw materials are organic and we use natural flavours as the final step in our process to flavour our brews.
